Updating DT docs

Overview

This MR updates the DT setup docs to remove some copy/paste artifacts from the original doc write up which came from our air-gap docs.

Tasks

• Update docs if needed (workflow, runbooks, README, migration metrics, etc.)

Acceptance Criteria

• Existing UTs pass locally
